Wash the zucchini flowers with water and let them dry, on a clean cloth or paper towel.

Mix water and flour , adding the water a little at a time to prevent clumps.

Heat the oil in a wide-deep frying pan until gets hot.

Coat the zucchini flowers with the batter.

Plunge the flowers into the boiling oil, 5-6 at a time, or you can try just one to see how will came out and make adjustment on time. Usually the darker the crispier, but make sure do not burn them.

Wait until they emerge from the oil and become golden. Remove them with a fork or a skimmer and let them dry out on the paper towels.

Salt and pepper them right away, the zucchini flowers taste better 1-2 minutes after removed from the pan and are still crisp.

If you want to eat them all together preheat the oven at 180 degrees and keep them warm until you are ready to serve them.
