Goshen’s Dry-fried Beef

Goshen’s dry-fried beef is tasty meal that is a Szechuan specialty. This meal is shredded steak slowly cooked until dry. Goshen’s dry-fried beef is a satisfying meal with an appetizingly unique flavor. This meal is a wonderful main course that is complemented nicely with white rice. A tip for Goshen’s dry-fried beef is that the thinner the beef shreds the better, using a very sharp knife carefully.

Serves 4

Ingredients:

· 1 pound(about 454 grams) of flank steak

· 1 large carrot

· 2-3 celery stalks

· 2-3 of finely chopped scallions

· 1 teaspoon(about 5 grams) of light brown sugar

· 1 finely chopped garlic clove

· 1 tablespoon(about 15 milliliters) of light soy sauce

· 1 tablespoon(about 15 milliliters) chili bean sauce

· 2 tablespoons(about 30 milliliters) of sesame oil

· 1 tablespoon(about 15 milliliters) of dry sherry

· ½ teaspoon(about 2-3 grams) of finely chopped fresh ginger

· Ground pepper, or Szechuan pepper

Ingredients:

Step 1: The first step in Goshen’s dry-fried beef is to cut the steak into matchstick sized strips. Thinly shred the carrots and celery sticks. Heat the sesame oil in a preheated frying pan. The pan will smoke very quickly. Reduce the heat and stir-fry the beef shreds with the dry sherry until color changes.

Step 2: Pour the excess liquid in a bowl and reserve. Continue stirring until the meat is absolutely dry. Then add the chili bean sauce, garlic, sugar, and soy sauce. Blend the mixture well and add the celery shreds and carrots. Increase the heat to high and add the scallions, ginger, and the reserved liquid. A tip for Goshen’s dry-fried beef is to cook up some white rice for a side dish to complement the meal.

Step 3: Continue to stir Goshen’s dry-fried beef and when all the juice has vaporized season with ground pepper or Szechuan pepper. Then serve and enjoy a wonderful meal.
