How To Prepare A Grilled Chicken Breast, Mashed Potatoes & Sauce
To prepare a farm fresh chicken breast you may need a sauce and mashed potatoes to eat along. You can also take with vegetables of your choice. This is a very tasty food for everyone. It serves 2 and takes 1 hour to prepare.
Ingredients
- 2 chicken breast.
- 3 onions, chopped.
- 2 cloves garlic, crushed.
- Juice and zest(skin) of 2 oranges.
- 500ml brown sauce (flour and butter)
- 5 large potatoes.
- Butter.
- Salt and pepper.
- 250ml cream or milk.
- Zest of 1 lemon.(grate with fine side)
Method
- Grill the chicken breasts for 30 - 35 minutes under a medium grill.
- Season to taste with salt and freshly ground black pepper.
To make the sauce
- Sauté onions and garlic in a little butter for about 5 minutes until translucent.
- Add the orange juice and zest and bring to boil.
- Add the brown sauce.
To make the mashed potatoes
- Boil the potatoes until well cooked.
- Drain, allow to cool and then peel the skin.
- In a pan, add a knob of butter to the potatoes.
- Season with salt and pepper.
- Mash the potatoes, slowly adding the cream/milk.
- Add the lemon and orange zest when nearly finishing mashing.
- Serve your dish with vegetable of your choice or use chips instead of mashed potatoes.
