Goshen’s Cabbage Salad

Goshen’s cabbage salad is a delicious way of enjoying cabbage. It is a nice way to start a meal or a nice vegetarian meal. Goshen’s cabbage salad also has its own homemade dressing. It is a quick and easy salad that will impress your friends and family. A tip for Goshen’s cabbage salad, use some of your favorite spices to personalize your dressing.

Serves 4-6

Ingredients for dressing:

· 2 tablespoons(about 30 milliliters) fish sauce

· Grated rind of 1 lime

·  2 tablespoons(about 30 milliliters) of lime juice

·  ½ a cup(about 119 milliliters) of unsweetened coconut milk

Ingredients for salad:

· 6 garlic cloves, finely sliced

· 6 shallots, finely sliced

· 1 small cabbage, shredded

· 2 large red chilies seeded and finely cut into strips.

· 2 tablespoons(about 29 grams) coarsely chopped roasted peanuts to serve

Directions:

Step 1:  The first step in Goshen’s cabbage salad is to make the dressing. Combine the fish sauce, lime rinds and juice, and coconut milk. Then set it aside, you can add in some more spices if desired to personalize your dressing.

Step 2: Get a large frying pan and put in the oil. Heat the oil in the frying pan and stir-fry the chilies, garlic, and shallots until the shallots are brown and crisp. Then remove and set aside.  Then blanch the cabbage in boiling salt water for about 3 minutes, then drain and put into a bowl.

Step 3: Then stir the dressing into the cabbage toss and mix well. Then transfer into individual salad bowls and sprinkle with the fried shallots and chopped peanuts. Then you can enjoy Goshen’s cabbage salad.
