Goshen’s fish and cilantro soup is also nice for a pre-meal appetizer or a nice quick lunch on a cold winter day.  If you are a seafood lover and enjoy the taste of flounder Goshen’s fish and cilantro soup might be the thing to lighten up your day. (Note: you can replace the flounder with any white fish of your preference if desired.) Serves 4

Ingredients

· 3 cups(About 705 milliliters) of chicken stock

· 1 tablespoon(about 15 milliliters) of soy sauce

· 1 tablespoon(about 15 milliliters) of egg white

· 8 ounce(about 226 grams) of flounder

· 2 teaspoons(about 20 milliliters) of cornstarch past

· ½ cup(about 117 milliliters) chopped fresh cilantro

· A pinch of salt

· A pinch of pepper

Directions

Step 1: Cut the flounder into slices, each about 1 ½ inch (about 4 cm) squares. A tip to make Goshen’s fish and cilantro soup would be to squeeze a little bit of lemon over the flounder after cut to add some wonderful flavor.

Step 2: Mix the egg whites and cornstarch paste in a medium bowl.  While doing this take the chicken stock and put it into a medium pot and bring to a rolling boil. Then take the flounder slices and put them in on the rolling boil for about one minute. Pouching the fish slices for too long in the boiling chicken stock may make the flounder rubbery or unsavory so watching the time is critical. (Remember to check the fish to make sure it is cooked thoroughly in Goshen’s fish and cilantro soup for your safety)

Step 3: Add the soy sauce and chopped cilantro, add the pinch of salt and pepper and adjust the spices to your personal preference. Serve immediately for the best taste and flavor of Goshen’s fish and cilantro soup; and enjoy this warm seafood delight.
