Mewi’s Halloween soup is a delicious soup made mainly with pumpkin.

Mewi’s Halloween soup is a great dish that you can easily make during Halloween, when there are lots of pumpkins around. And of course what better way to use those pumpkins, other than just carving them, than to also use them to make yourself this wonderful soup.

Mewi’s Halloween soup offers a beautiful blend of pumpkin and potatoes and will be a great starter for your meals.

This recipe serves up to 6 people.

INGREDIENTS:

- 1 ½ kg (53 oz) of pumpkin, chopped into pieces.
- 750 g (26 ½ oz) potatoes, chopped into pieces.
- 1 onion, chopped into medium pieces.
- 2 clove of garlic, chopped into small pieces.
- 30 ml (2 tbsp) olive oil.
- 500 ml (1 pint) of chicken stock.
- 250 ml (1 cup) of cream.
- Salt*
- Powdered black pepper*
- Parsley*

*Add this ingredient in whatever amount fits your taste, but not too much.

COOKING INSTRUCTIONS:

1) Heat the olive oil in a large, heavy-bottomed casserole.
2) Now add the chopped pieces of the onion and fry on medium heat.
3) Once the onions turn slightly golden, add the chopped pieces of garlic, the potatoes and the pumpkin.
4) Lightly fry the ingredients for about 15 minutes.
5) Add the chicken stock and bring to the boil.
6) Leave the ingredients simmer until they are tender, this should take around 40 minutes.
7) At this point, use a blender to blend the ingredients well, until they have a consistency of a smooth cream.
8) Once it is all well blended, add the cup of cream and cook for a further 15 minutes.
9) Now use the salt and powdered black pepper to add more taste and cook for another 15 minutes.
10) Once the soup is ready to serve, sprinkle some parsley over the top to garnish it.
