I was taught this simple and elegant recipe by a Spanish woman who told me that this was a little Spanish village favorite. Goshen’s grilled sardines are a nice treat for the seafood lovers out there. This dish can be spiced up with some of your favorite herbs. Goshen’s grilled sardines are cooked whole and can be cooked as fillets.

Serves 4

Ingredients:

· 8 fresh sardines that have been scaled and gutted.

· extra-virgin olive oil

· sea salt to taste

Directions:

Step 1: The first step is Goshen’s grilled sardines are to brush the sardines lightly with olive oil and season with salt. Then lay the sardines on a grill over hot charcoals or a high flame and cook for 2 minutes on each side. Transfer to a platter and garnish with more salt if desired and drizzle with olive oil.

Optional: If you want to fillet the sardines before serving, hold the sardine by its belly flat on a cutting board. With your other hand pinch the tail and pull up toward the head. The spine and bones should pull out easily leaving two fillets. Then you are ready to enjoy Goshen’s grilled sardines.

TRCB.com
